Prior to the start of our dinner, we were served with a bread roll each, accompanied with chili sauce, butter and tomato ketchup. I was just wondering who could be the Smart Alec who came out with this wasteful method of serving diners? Can’t we just have butter and save up the sauce until requested? Anyway, their warmly served in-house made buns were amazingly tasty and were rather compact compared to those served elsewhere.

The first dish started off with an Appetizer of mixed green, dressed with honey lemon vinaigrette and topped with some slices of smoked duck. It was a palatable dish to start off the meal.

This was followed with Seafood Corn Soup. The soup had a rather unique combination of flavors with sweetness from the creamy corn kernels and a mild hint of lemongrass. It was garnished with some mixed herbs. The soup had chunks of scallops and prawn for the extra bites. Though the soup was to my liking, I somehow prefer diced fish fillet to replace the scallops as it would pep up the taste for the soup further. Some light sprinkles of paprika and chopped spring onions would be great add-ons too.

We were given the options to choose one main course out of 4 options, namely poultry, fish, beef or lamb. The first option was the David Brown’s Grilled Chicken Chop, served with roasted baby potato, steamed vegetables and a slice of corn cob with grilled jumbo sausage as bonus. The kitchen used their homemade BBQ sauce for the grilling and it came out quite perfect with the slightly burned after taste. It’s not a bad dish to order though. However, the bonus of jumbo sausage would need a bit of adjustment. Instead of directly grilled over the skillet, it could have gone through a process of boiling then grill to maintain the juiciness within. Alternatively, the kitchen could get the boil version as to maintain the yin and yang of the overall dish. I also do hope that the kitchen would look into having a small saucer of BBQ sauce or even some chicken jus for those who do not like their dish to be served so dry.

The second option was the Pan Seared Sushi Grade Norwegian Salmon, served with potato cream, citrus salsa, pea sprout and aioli. I like how the salmon fillet was pan seared to perfection with the flesh still juicy and the skin having that nice aromatic crispiness. The fresh egg based mild hint of lemon citrus flavor complemented the fish real well.

The third option was the Pan Seared Grain-fed Sirloin Steak served with roasted baby potatoes, onion marmalade, mixed green, balsamic reduction and au jus was also one of the most sought after dish amongst us. You could always ask the chef to cook it up to your preference such as medium-rare, medium or even well done (well.. I won’t recommend this option as it would toughen the meat).

The fourth option would be the Braised Lamb Short Loin, served with potato cream, onion confiture and steamed vegetables. This was one of the more flavorful ones amongst the four options as all the flavors were extracted into the gravy. It had hints of apple sourness with a light touch of balsamic vinegar. However, the braising time of 3 hours for the lamb should be adjusted slightly lesser as the meat lost some of its biting texture. Overall, it was still a nice dish to savor over a glass of wine.

Finally, it was dessert time with the serving of their mouth-dripping Chocolate Mousse Cake, skillfully decorated with a sweet flaky pistachio tuile, served with a scoop of vanilla ice cream on crumbled Oreo soil and mixed berry compote. It was heavenly and the whole combination had just the right sweetness to my liking.

Lastly, you have the option to choose between Tea or Coffee to end your meal.

For those who had missed out on purchasing their vouchers or having gone up during lunch time (11.00am-3.00pm), you could always check out their ala carte menu. One of their unique and signature dishes would be their Chicken & Mushroom Pie (RM48++). It’s one of its kinds in this region or maybe in the world. Instead of the normally enclosed filling of a pie, their version will consist of a plate of nicely stewed chicken chunks with mushroom, served with steamed vegetables plus a ball of mashed potatoes and topped with a freshly made puff pastry. Taste wise, it was just like the traditional style of cooking chicken stew with an add-on piece of butter infused flaky pastry.

For those who would just love to enjoy the breezy cool air of the “hill on a hill” aka Strawberry Hill on Penang Hill, you could always come over to the restaurant their Afternoon Tea (3.00pm-6.00pm). The most recommend and sought after set on their menu would be the David Brown’s Petit Four (for 2 pax – RM78++), serving you with their finest tea for two, fresh fruits, tarts, sandwiches, fruit cake and English scones with their homemade strawberry preserve and cream.

So what would you do after a hearty dinner or even finding a place just to relax after a long walk around Penang Hill? You can always laze about at David Brown’s Sky Terrace, one tier below the restaurant, over some light snacks and beverages. There will also be band performance during Friday, Saturday, Sunday and public holiday. They will operate from 9.00am until 11.00pm daily. Please do take note that the last train downhill will be at 11.00pm. Unless you are staying uphill for the night, do take heed of this reminder. On top of their English Breakfast Set Meal (RM25++), you can still order their Devonshire Cream Tea (RM25++) which would come with a pot of hot tea, 2 scones and their homemade strawberry preserve and cream. Do check out their cakes too. My recommendation would be their Tiramisu (RM15++). Since I was in the mood for watching the panoramic night scene, I stayed on over a pot of Peppermint Tea (RM12++) and a steaming hot cup of Coffee Latte (RM12++). I was impressed with their use of the Italian brand Caffe Vergnano Espresso Rico ‘700 which has an intense and full-bodied flavor with hints of chocolate finishing. This blend had just the right balance of fragrantly roasted Arabica combined with the rich and full-bodied Robusta. The Coffee Latte served here was one of the best milk-based espresso beverages I have tasted.

While waiting for the sky to get even darker for the perfect night lights shots, I was also munching some of their Crunchy Breaded Calamari Rings (RM20++), served with their homemade tartare sauce. It was nothing great to shout about but at least there was something to keep my mouth moving~ LOL!

Overall, I do find some of the dishes served here to be quite impressive. However, there are still rooms for improvements, considering that time has changed and so do the taste buds of the diners out there. The simple and traditional way of preparing food might no longer attract diners of the younger generations. Price wise (other than the set dinner promotion which is a great bargain), some may find the menu pricing to be exorbitantly steep. As a Penangite, I would consider myself lucky having a cool, breezy and relaxing place to fall upon when I needed a short getaway to rid my body and mind from the stressful city life. Compared to travelling to another hill resort outside Penang to dine out, don’t you think that it’s even cheaper to pay a friction of the travelling cost and pamper yourself more often like a King or Queen over some meals at David Brown’s Restaurant & Tea Terraces? The choice is yours. I rest my case.

It’s not hard to find David Brown’s Restaurant and Tea Terraces as it’s located above the small Strawberry Hill next to the train station. Upon disembarking from the train, just walk towards the end and turn right and you can see a stairways leading up to the restaurant.

Before I start my post on the Sanrio Hello Kitty House in Bangkok, Thailand, let’s welcome the latest addition to the Hello Kitty family right in Malaysia. I’m sure those who had frequent Sunway Pyramid in Bandar Sunway, Petaling Jaya, Selangor, would have noticed a huge pink signage on the construction site next to Caffe Benne. Yup! Malaysia will be having its first Hello Kitty Gourmet Café right in the heart of Sunway Pyramid Shopping Mall real soon. I’m sure due the limited space within the complex, the layout might not be the same as the rest of the cafes throughout the world. However, I would be sure that it would be pink everywhere with whatever corner filled with your beloved Hello Kitty decors. Don’t you love PINK now? LOL~ 😛

Recently, I paid a visit to the Sanrio Hello Kitty House at Siam Square One in Bangkok, Thailand. It was a unique multi-storey shop unit filled with lots of pink, love and cuteness at every possible corner within the premises. Why is it called Sanrio Hello Kitty House? It actually housed two levels of Hello Kitty Café and a basement level of Hello Kitty Shop and Hello Kitty Spa.

Let’s have a look at the respective floor of the Hello Kitty Cafe. The first floor comprised of the ordering counter where you can have glimpses all the cute desserts on display. There was also a take-away counter on the far right for your beverages and light snacks. The system here was somewhat like how you would order your items at Starbucks, eg. Order-Pay-Collect. For orders that would require some period of preparation time, you would be given a number and the staff would deliver to your table.

Though there were some dining areas at the first floor, the second floor itself was more spacious and basically just for dine-in with more selfie corners, pinkish chairs and lounge sofas for you to slumber in.

When you are so far away from home and at such a themed café, you would want to try the best items that they would offer. All price quoted is inclusive of 7% VAT. The Lemon Tart (THB280nett) display at the chiller caught my attention. Well, looks can be real deceiving. Sometimes, when we deemed an item to be photo-worthy, it might not appear to be tasty at all. That was what happened. The lemon tart set was horrendous! The lemon filling tasted rather fake and extremely sour. As for the crust, I would recommend you to request for a hammer and chisel. It was so rock hard that I might break the given pair of fork and knife. Those “chick pea” like pebbles were nothing more than some bland biscuits. If not for the chocolate sauce, I would just leave them aside. For that lovely looking mini mug with red mousse, it was just some tasteless cream with red coloring. As one of the most expensive desserts on the menu, it was one order that was barely consumable.

Thanks goodness the kitchen ad hoc prepared Ham & Cheese Sandwich (THB200nett) was at least edible. It was just two slices of “Hello Kitty” face shaped toasted bread with rolled ham and cheese, accompanied with some cheap greens with salad dressing. It was normal and nothing to shout about.

As for drinks, I ordered their recommended Kitty Smoothie (THB150nett) and Hello Kitty Mineral Water (THB30nett). Except for the bottled water, I really can’t figure out what I was drinking. It was like drinking a glass of syrup with some light hints of milk and strawberries. It was so sweet that I had to leave it after a few sips as it might juggle up my glucose level. I’m still wondering why the Thais like their drinks to be so artificially sweetened up.

Let’s leave the food and beverage woes away and check out the basement of the unit. The Hello Kitty Shop will be a merchandise heaven for those Hello Kitty enthusiasts as they have practically everything you ever dreamed of having here from little memorabilia to items such as T-shirt, bags, umbrellas, etc. I’ve to forewarn you that prices of the items are not cheap. They are original franchised items after all.

On the other hand, you would find the Hello Kitty Spa at the other further end of the basement level. This might not be the type of spa you would be expecting as it would basically cater to the feminine parties, kid inclusive.

Overall, Sanrio Hello Kitty House is quite a nice place to bring your family or dates for the first time experience but most people won’t be able to stay there for too long. The reason is that the never ending replaying of the theme song can drive anyone up the wall with madness. Can you imagine having the same few seconds theme song playing over and over again at the moment you step into the place until you leave? OMG! As for the food and beverage wise, I was expecting something more edible rather than loads of food and drinks with high level of sugar and coloring contents. I hope we don’t get these experiences at other franchised outlets in the near future.

SPECIAL MANTOU AT RESTORAN CHUAN HEANG IN BEDONG KEDAH

Recently, I had a short trip out of Penang to visit a wall mural site at Pekan Semeling (錫米嶺/新文英 – GPS: 5.700010, 100.472375), a small town within Bedong (off Sungai Petani) in Kedah, Malaysia. It housed many mural arts by various artists at the back alley of some old and abandoned houses along Jalan Raya Semeling, 08100 Kedah, Malaysia. You can check out the wall murals at my FB Site. To fill up my stomach prior to visiting the wall mural site, I’ve decided to pay a visit to a restaurant 10 minutes or 7.5km away named Restoran Chuan Heang (全香茶餐室), along the old trunk road of Jalan Utama Alor Setar-Sungai Petani. The restaurant has its regulars swarming in continuously for its specially crafted mantou, none that you could find anywhere in Malaysia. Other than the mantou, you could expect to order some home-style Chinese dishes.

Let’s start by introducing the much acclaimed Steamed Mantou with Fritter (RM1.40nett/pc with minimum order of 4 pieces or according to the number of diners with more than 4 pax). Each of the delicacy would come with a somewhat square steamed mantou filled with a crispy homemade fritter plus a light touch of sweet BBQ sauce. As the crispiness of the fritter overwhelmed the taste from what were within, many diners had the wrong idea that it was filled with prawn, pork, etc. It was actually filled up with mashed fish, dried shrimps, shitake mushroom slices, chopped spring onions with a light touch of seasoning and wrapped in bean curd skin, prior to being coated with batter and deep fried to golden brown. It was indeed a rather unique way to serve mantou. However, as a seasoned food creator with a higher expectation on quality, I do find the item lacked of bites other than the crispiness from the thickly coated batter. The filling was barely 3mm in thickness, whereas the batter had expanded to ±25mm. Moreover, the BBQ sauce was not adequate to give the whole bite a juicy sensation. Well, I can’t complain much as it was indeed a rare creation and at a cheap price of RM1.40nett each.

Since it was lunch time and their Roasted Pork Trotter won’t be ready until 5.00pm, I tried their Braised Pork Trotter (RM24nett) instead. It was juicy and meaty with just some lightly spiced up gravy, accompanied with some vegetables and mushrooms. Though the flavors were quite adequate to go with a plate of hot steaming rice (RM0.80nett/bowl), it would be great if the kitchen had extended the time to marinate the trotter more to enable more flavors to seep into the meat. Alternatively, if you love this type of braised dish, I would recommend you to try out the more flavorful Braised Ham Hock at Zi Zai Restaurant in Paya Terubong, Penang.

Next on the list was the Steamed Prawns with Egg (RM14nett). This dish could be a love-hate dish for some diners as it used lots of julienned young ginger and Shao Xing wine. The dish practically had 4 butterfly-cut large prawns laid on top of beaten eggs with a generous amount of julienned ginger prior to steaming. When cooked, the dish would be garnished with some deep fried garlic in oil, a light touch of soy sauce and sesame oil plus some sprinkles of Shao Xing wine. Though it could be a bit strong for many, I quite like the dish due to the freshness of the prawns as well as the nice combination of flavors.

Lastly, I just ordered a simple Stir Fry Bean Sprouts & Pea Sprouts with Salted Fish (RM6nett). I loved this type of combination as bean sprouts could be rather soft if overcooked while pea sprouts could be rather fibrous if cooked alone. The kitchen got the heat right while maintaining the crunchiness of the vegetables. The added salted fish was also nice as they used a better graded one which was not too salty. It would be great if the kitchen would add in a light touch of julienned ginger and red chilies to pep up the flavors more.

Overall, it was still a satisfying and homely meal, considered that everything served on that day were fresh and cheap. It might be that Penangites tend to have stronger taste buds on flavors and it would take a bit of effort to get use to the taste of food in the neighboring states.

It’s not really hard to locate Restoran Chuan Heang (全香茶餐室) as it’s just along the old trunk road of Jalan Utama Alor Setar-Sungai Petani. Some may just label the road as Jalan Raya or Batu Satu but if you have a GPS gadget or even mobile application such as WAZE, just key in the GPS coordinates provided below and you won’t get lost. I’m sorry that you can’t key in the restaurant name as it’s not detectable on Google Maps or WAZE. To reach the trunk road, the nearest PLUS highway toll station would be at Sungai Petani (U – Utara). Upon exiting the toll plaza, keep to your right until you reach the traffic lights. Turn right and drive about 7.6km or 10 minutes away until you see a Caltex and Shell petrol kiosk next to each other on your right. The restaurant is just directly opposite the Shell petrol kiosk on your left.

“Every day is Earth Day in the Shangri-La’s Kitchen” as Shangri-La Group of Hotels and Resorts worldwide launched their “Rooted in Nature” campaign on 22 April 2015 last month. It’s a part of the group’s initiative to maintain culinary sustainability, thus raising the awareness on consuming freshly farmed food which had gone through strict international standard requirements without harming the environment. Today, Shangri-La’s Golden Sands Resort, Penang had invited a special guest to join them in the journey of “Rooted in Nature”. He’s none other than the Iconic American Chinese Chef, Chef Martin Yan.

Most of us have grown up with Chef Martin Yan’s award winning cooking show, “Yan Can Cook” with his catchy phrase line of “If Yan can cook, so can you!” Chef Martin Yan simply made cooking looks so easy, especially on how he uses his customized knife to prepare ingredients with barely any effort. I’ve tried using his knife and it indeed had that balance, lightness and sharpness as claimed by the chef himself. Chef Martin Yan sure knows his kitchen utensils’ precisions well.

Chef Martin Yan who is currently in Malaysia for the filming of the upcoming TV Program, “Taste of Malaysia”, to be aired somewhere in late third quarter of this year, paid a visit to GST Group Fish Farm, one of the sustainable food partners of the resort offshore of Pulau Jerejak, Penang, to discover the source of sustainable seafood. According to him, we are lucky to have such fresh fishes of such huge sizes easily available for our consumptions unlike in USA. He later teamed up with Golden Sands Resort’s Executive Chef, Chef Adrian Lim, to pep up a delicious Nyonya Curry Kapitan Fish dish with their morning’s fresh catches. The recipe used fresh sustainable seafood, combined with some organic and locally produced herbs and spices.

We also had a try-out on some of the “Rooted in Nature” dishes at the resort’s Sigi’s Bar & Grill (the other Rooted in Nature participating eatery is their Garden Café). Diners can identify the Rooted in Nature dishes by spotting a “pea shoot” logo printed alongside the dish description. We started off with their Grilled Free Range Chicken & Organic Tofu Salad. It was truly a well balanced diet with lots of fresh romaine lettuce and onion rings dressed with balsamic vinegar, topped with some perfectly grilled yet juicy free range chicken breast meat and accompanied with some organic tofu cubes. It was indeed a great salad before your main meal.

As for main, we tried out the Rosemary Scented Broiled Chicken served with vegetables of the day, mashed potatoes and brown jus. The half free range broiled chicken was just the right size to give that flavorful yet juicy impact.

Lastly, we were served with their Double Scoops of Yam & Coconut Ice Cream topped with whipped cream. I must say this was the heaven of the day as it was not just any ordinary ice cream but one with real yam bites. Combined with the creamy texture of the coconut ice cream, it was a hit amongst us.

Overall, it was a fun outing having to catch up with Chef Martin Yan once again on his Malaysian tour. At 66+ years old, he’s still as comical and humorous as he was on the TV shows. As for the Shangri-La Group of Hotels and Resorts worldwide, I would want to wish them all the best in achieving their goal of serving 75% more sustainable sourced food on the menus within the next 5 years.

Many people are not aware of the small town of Terong, located between Changkat Jering and Pantai Remis in Perak Darul Ridzuan, Malaysia. The quaint township used to be quite active in tin mining until the late 1970s but has now been replaced by rubber and palm estates as well as charcoal factories. Thanks to the snail development pace for decades, Terong is still left untarnished with the pollution of mankind. It still has the old architectural buildings intact, lively mangrove swamps, forest reserves, clean rivers, scenic waterfall such as the Air Terjun Terong and more. Located about 10km away from the Changkat Jering toll plaza and 1.5km into Terong, lies a nice getaway for families and friends. It’s the first duck themed resort in Malaysia with a total area of 70 acres called Trong Leisure Farm & Resort (自農休閒農莊). The place would consist of a resort with recreational activities, a fishing pond, a duck farm (formerly called Soon Hock Duck Farm), a pork-free seafood restaurant and a Halal Malay restaurant.

INDOOR & OUTDOOR RECREATIONS:

There will be a small amusement corner next to the restaurant for children such as the Duck Ride Machine and Toy Grabbing Machine. You can change some coins at the cashier counter. Other than that, you can try out the Duck Pedal Boat at RM6 per 15 minutes or feed the duck with duck feeds at RM2.00/100g. You can buy the ticket at a shop lot next to the pond. There’s a passion fruit arch nearby. If you were lucky enough, you might find some fruits intact but I only managed to see some blooms. Do not go about plucking anything in the farm as you will be fined heavily for vandalism.

FISHING POND:

There will be a few species of freshwater fishes in the pond for your angling experiences such as tilapia, lampang, rohu, patin, sultan fish and more. Any fish above 3kg has to be released back into the pond. Other than the tilapia and lampang which you can bring home for free, rohu and patin will be charged at RM5/kg whereas sultan fish will be charged at RM20/kg. There will be a small fee per rod for the number of hours you spent fishing by the pond (9.00am-9.00pm). DUCK FARM VISIT:

There will be 6 duck houses with each house able to accommodate around 1200 ducks. In total, there will be around 7000 ducks at one time. You will be able to get upclose and personal with those ducklings, drakes and ducks. You can identify the gender of the drakes by their low and deep sound whereas the ducks with their louder and high pitched sound. Ticket is available at the restaurant count at RM5.00/adult and RM3.00/child. Visiting hours will be from 9.30am until 7.00pm. Resort guests will be at half price. A tractor with passenger seats, will chauffer you to and fro from the duck farm. At the moment, there’s no limitation on how long you can spend at the duck farm. Be warned that there might be strong stench emitting from the duck shit along the way. Please make sure that you close all the gates when you enter each fenced farm to prevent the ducks from running out. If you are lucky, you might find some egrets mingling with the ducks.

RESTAURANTS:

There will be a HALAL Malay restaurant named Naz Tomyam at the dining area. The vendor will operate from 6.00am until 12.00am. Since this was my first time here, I only managed to try out some of their signature dishes. The first dish was their Signature Pei Pa Duck (Pipa Duck/琵琶鴨 – RM20nett/half duck). The name derived from the shape of the duck being opened up prior to roasting which resembles the Chinese musical instrument, Pipa. The sauce had all the necessary flavors which may include hoisin sauce, dark soy sauce, ginger juice, sesame oil, sugar and finely chopped garlic. However, the skin was not as crispy as it should be and the meat was rather tough. From my experience having this dish many times, I would think that the kitchen did not spend time truly understand the method of tenderizing the meat. Moreover, the skin won’t be so soft if they had the proper time to sun-dry the duck properly. On top of that, some famous vendors would normally deep fry the roasted duck prior to serving to give it that extra crispiness. Something might have gone wrong in their process or else it would be a perfect dish to my preference.

The next dish was the Chili Salt Deep Fried Squids (椒鹽蘇東 – RM15nett). I was actually expecting this dish to be Pepper Salt Deep Fried Squids since “椒” can mean pepper too but it ended up as diced capsicum salt version. The taste was not bad but it would be better if some coarsely pounded black pepper be added in for that extra earthly flavor.

We also tried out their Signature Deep Fried Homemade Tofu (招牌豆腐 – RM10nett). There are many versions of homemade tofu being served in different restaurants, from silky smooth texture to reprocessed mashed ones with sandy texture aka the Yunnan style tofu. The ones served here was the latter. However, the tofu only had mashed bean curds with only Thai dried shrimps, some chopped scallions and added egg to steam again to make the block. The end product would then be cut into bite sizes, coated with some corn starch and deep fried to golden brown prior to serving. The tofu fell flat to my liking without much flavor and they were rather chewy too. They did not have that bite as some of those I had tasted before. With some added thinly sliced wood ear fungus or finely chopped up shitake mushrooms would have given the dish better justice. I hope the kitchen would improve further on this dish.

The last dish I ordered was their Signature Eggplant with Dried Shrimps (蝦米茄子 – RM10nett). The dish was just some deep fried batter coated eggplant slices stir fried with some onions, curry leaves and dried shrimps. The whole dish practically depended on the flavor from the dried shrimps, nothing else. The chef should at least add in some pounded bird eye chilies or sliced red chilies or even some chopped fermented black beans to pep up more flavors. The dish was rather amateurish and rather one track style of cooking to my liking.

As for beverage, we just ordered a jug of Prunella Herbal Tea (夏穀草涼茶 – RM9.00nett). This was a real thirst quencher with the use of brown sugar to clear the internal body heat from the scorching sun.

If you are in for freshly salted duck eggs, you can always purchase a bag of 12 salted eggs at RM9.00nett at the counter.

Overall, the restaurant could just be a convenient place for visitors to dine in but not one that could provide the right balance of yin and yang in flavors. In short, it’s a place to fill up the stomach but not the place to go for skillfully prepared meals. Maybe as a Penangite, we have been pampered with too many choices to end up with this type of verdict. However, I hope that the kitchen will improve their food quality too. Wouldn’t it be great if the restaurant could attract more outsiders rather than relying just on the visiting crowd?

It’s not really hard to locate Trong Leisure Farm & Resort as it’s just along the main road towards Terong. No matter where you are coming from such as Taiping, Lumut, Pantai Remis or even via Changkat Jering toll using the old trunk road, just look out for the “Terong” signboard. As you turn into the main road via Jalan Kuala Terong, just drive further in for about 1.5km and you can see the venue on your left. No worries as there’s a big signage in front of the property.

Since I have some of the Gartien’s Seasonal Crystal Pineapple Confiture around, I created some healthy recipes out of the product and the end products were excellent.

The first creation was Prawn & Meat Ball with Crystal Pineapple Salsa. The prawn and meat ball had a little marinate of soy sauce, sesame oil, pepper, sugar, corn starch with lots of chopped onions. The inner part was moist and juicy while the crust had that mild crisp from slow pan searing. The Salsa basically consisted of chopped crystal pineapple confiture, onions, cherry tomatoes, parsley with some light touches of extra virgin olive oil and salt. The whole concoction will be great for tapas parties.

The next creation was the Crystal Pineapple Mint Tuna Yoghurt on Cheese Toast. As for the bread, I had a piece each of round cut and ring cut wholemeal bread with a piece of cheese stuffed in between. These were oven toast for 5 minutes to bind them into a “cup” base. The filling had yoghurt, chopped mint leaves, dry herbs, tuna chunks in olive oil and chopped crystal pineapple all stirred together to get the right balance in flavors. I had some sprinkles of ebiko and sweet paprika to boost up some colors. This would be another great party idea to impress your healthy guests.

Since most of us have been indulging in rich meals most of the time, I had decided to come out with a healthy beverage to help you all in detoxification. LOL~ 😛 I called this drink – Healthy Detox Juice with Crystal Pineapple and it’s full of digestion-boosting enzymes. You can either juice or blend the ingredients. However, I only have a blender in hand, thus I just sieved the end product and pour it into a glass filled with a scoopful of the Gartien’s Seasonal Crystal Pineapple Confiture. Just top up with some ice cubes and you can start enjoying your refreshing drink. The recipe is rather easy as you need to blend in just a green apple, 10 mint leaves, a cup of fresh coconut water, a teaspoon of honey and a mini pinch of salt. Sieve and serve chill.

Overall, I personally feel that this is a great add-on product to ease many kitchens. Not only will it save a long period of time in pepping up some confiture for a dish, it also adds some boosting flavors to many dishes. In short, it’s a miraculous creation for just any dish, from meat, poultry, seafood, vegetables to desserts. I have created some recipes here and let’s see what else you can create with this product. While Earth Day will fall on 22 April each year, “Every day is Earth Day in the Shangri-La’s Kitchen,” said Suleiman Tunku Abdul Rahman, Director of Communications, Shangri-La’s Rasa Sayang Resort & Spa and Golden Sands Resort, Penang. With the theme “Rooted in Nature”, Shangri-La Group of Hotels and Resorts worldwide support sustainable food produces from its local agriculture and aquaculture sectors. It’s an initiative to raise awareness on consuming freshly farmed food which had gone through strict international standard requirements without harming the environment. Not only will this campaign support the livelihood of its local farmers and fishermen, it will also enable diners to have fresher and healthier choice of diet without worrying about the presence of pesticide, hormone or antibiotic in their food. Moreover, dishes on offer will include produce and herbs grown on hotel grounds, locally sourced organic vegetables and fruits, line-caught fish, free-range poultry and beef, honey from a hotel’s own beehive, etc. According to Peter Finnegan, Shangri-La’s Group Director of Food and Beverages, “Our goal is to serve 75% more sustainable sourced food on the menus by year 2020.”

While engaging local partners such as the GST Group (seafood) and Ayamplus Food Corporation Sdn. Bhd. (poultry) in their “Rooted in Nature” campaign, we were fortunate to be given the opportunity to attend a food source trail at GST Group Fish Farm located offshore of Pulau Jerejak, Penang. GST Group is also the only European Union compliant fish farm in Malaysia, with two other fish farms in Pulau Aman and Pulau Pangkor plus a retail shop located in Simpang Ampat, Penang. The initial GST actually came from the founder’s name, Goh Siong Tee, 90 years old, decades ago and not to be confused with the recently implemented GST (Goods & Services Tax). “The name did draw a lot of attentions but in a good way too as it helps us to promote our business better,” jokingly stated by Joey Ong, Senior Business Development Executive. After having some breakfast sponsored by the hotels, we embarked on our journey via 3 fishing boats towards our destination. Anyway, we did not spot any mermaids or mermen on the way~ LOL~ 😛

We were briefed by En, Mohd Addin Aazif, Senior Aquacultural Technician, as well as by Mr. Goh Chin Twan, GST Group Marketing Manager, on the ecologically and ethically farmed fishes which ranged from species such as red (crimson) snapper (ikan merah pucat/ang sai/紅雞), golden snapper (ikan jenahak/ang cho/紅鰽), giant (goliath) grouper (ikan kertang/long dan/龍膽), pearl grouper (kerapu mutiara/long hu ban/龍虎斑 – a 2006 hybrid species between giant grouper and tiger grouper), cobia (ikan haruan tasik/hai lay/海鱺 – sashimi species), giant trevelly (ikan gerepuh/gu kang cheoh/牛港鰺 – commonly known as GT) and more.

Of course, the chefs from both Golden Sands Resort (Chinese Chef, Chef Danny Tan) and Rasa Sayang Resort & Spa (Executive Chef, Chef Lim Soon Leong & Chef de Cuisine, Chef Matthias Tretbar) could not resist camwhoring with some “edible fishes”, especially with the juvenile 17kg Giant Grouper (Ikan Kertang/Long Dan/龍膽). The Giant Grouper can reach to a maximum size of 2.5m and weigh more than 350kg.

After a fun-filled and knowledgeable expedition, we continued our journey up Batu Ferringhi towards the two participating Penang hotels – Golden Sands Resort and Rasa Sayang Resort & Spa. Each hotel has two participating eateries. Diners can identify the Rooted in Nature dishes by spotting a “pea shoot” logo printed alongside the dish description. It’s to ensure that the fresh ingredients used strictly follow at least one of the 5 guidelines, which are local produces, pesticide-free products, free-range livestock & poultry, sustainably sourced food and organic & fair trade products. You can check out the “pea shoot” logo as printed on the hot beverage below.

At Golden Sands Resort, we were led to Sigi’s Bar & Grill (the other Rooted in Nature participating eatery is their Garden Café). At the venue, we had the opportunity to try out some of the chefs’ skillfully prepared dishes from their “Rooted in Nature” menu from Grilled Sea Bass, Grilled Free Range Chicken & Organic Tofu to SIGI’s signature dessert of Double Scope Yam and Coconut Ice Cream with Fresh Whipped Cream.

On the other hand, Rasa Sayang Resort & Spa’s Spice Market (the other Rooted in Nature participating eatery is their Feringgi Grill) indeed do serve an extensive varieties of fishes, namely the Pearl Groupers and Red Snappers, cooked in a few unique flavors. These dishes will be available amongst the buffet spread from time to time.

We actually started the meal off with a bowl of Double-Broiled Free-Range Chicken Herbal Soup. Wow! I was impressed by the flavorful and nourishing herbal soup. It was indeed a great bowl of soup to replenish all the sweat and energy lost under the scorching sun during our field trip earlier. In fact, it was one of the best soups I’ve tasted with the usage of quality herbs, combined with the rich flavors from the hormone-free and antibiotic-free range chicken.

Amongst the many fish dishes served on the day, we were presented first with the non-spicy Chinese Style Steamed Pearl Grouper with Superior Sauce. It was just a commonly prepared banquet style dish but you could ascertain that it was at its freshest. How would you judge a fresh and mud-free fish from any restaurant? It’s in the basic ingredients used to pep up the flavors without the presence of julienned ginger.

We were also served with the Indian Style Red Snapper Curry. It may be another commonly available dish at most Indian and Mamak restaurants but again Spice Market lived up to its name by infusing quality herbs and spices into the dish. Moreover, the added sliced tomatoes and lady’s fingers were great complements. Can I have more steamed rice with this dish?

We then had the Malay Style Ikan Merah Masak Tiga Rasa (Malay Style 3-Flavors Red Snapper). I guessed each restaurant has its own style of presenting this dish. Most of the time, it was just batter fried fish in sweet and sour sauce with added bird eye chilies (cili padi). However, the chef here presented the dish with their own concocted gravy. It was indeed a dish favorable to my taste bud.

Somehow, the next dish which was the Nyonya Style Steamed Pearl Grouper had me indulged sinfully with more steamed rice. It was heavenly. Most the distinctive flavors from the usage of fresh ingredients used in Nyonya cooking were present with the additional refreshing flavor from the added mint leaves. However, I found the gravy to be too finely presented as in the herbs and spices being too finely blended. It would be great if the kitchen would coarsely blend them to give that little bit of bites. A little bit more of added ginger flower (bunga kantan) would surely pep up the dish further too.

The last of the fish dish was the humongous sized Italian Style Baked Pearl Grouper Parmigiana. If my guess were to be right, it could be around 5kg or more. It was like having pizza but with fish instead of dough as base. Though it was real presentable as a whole fish, it would be better to work with fish fillet instead. The whole dish was delicious but somehow the thick slab of flesh did not absorb the flavors from the ingredients used. This could be my personal preference dealing with meaty fish but I can assure you that the fish was extremely fresh without any trace of muddy after taste.

We ended up with a sweet treat created by their skillful pastry chef. It was the Lemongrass Crème Brulee with Coconut & Pandan Sauce. It had a smooth texture with a mild spiced up flavor from the lemongrass. The dessert went well with the condiment of coconut and pandan sauce.

Somehow, something got the sweet tooth out of me on that day which was never a norm for me. I could not have enough of desserts! LOL~ In the end, I adjourned to the FIP (Fun, Interactive & Play) Lounge next door and ordered the first thing that caught my attention. It was the Black Forest Chocolate Pizza served with Fresh Vanilla Pods Ice Cream. It was a decision I would never regret as the pizza had just the right ratio of bitterness against sweetness, from the base, shaved chocolate, black forest right up to the ice cream. By then, I was already up Cloud 9, indulging in the heavenly dessert. By the way, you could always check out FIP’s Weekend Coffee & Cakes Buffet at RM47nett/adult and RM24nett/child, serving from 3.00pm until 6.00pm (Saturday & Sunday).

Overall, from my previous dining experiences at both Golden Sands Resort’s Sigi’s Bar & Grill and Rasa Sayang Resort & Spa’s Spice Market, compared to now, the quality of dishes always gets better, with their assurance on the usage of the freshest ingredients plus high quality herbs and spices. Do support them on their mission to accomplish the best out of their Rooted in Nature campaign. It’s not only a WIN-WIN working relationship between the hotels and local suppliers but a WIN-WIN-WIN scenario for us diners as we are served with healthier and sustainable sourced food.

MY FAVORITE MOO PING STALL IN BANGKOK THAILAND

Other than hunting for unique and fashionable items or visiting the many temples in Bangkok, the next attraction would be the street food. Along the many thanon (main streets/ถนน), soi (side streets from main streets/ซอย) and trok (alley/ตรอก) in Bangkok, you would surely find some quick bites that would suit your preferences. Other than the easily available meaty Sai Au (Nothern Thai Fermented Sausages/ไส้อั่ว) and Sai Krok Isan (Northeastern Thai Fermented Sausages/ไส้กรอกอีสาน), the Moo Ping (BBQ Pork on Skewers/หมูปิ้ง) somehow remains my favorite. Well, the scents of well marinated food would surely command my nose to their whereabouts~ LOL! I would say I was lucky though it was my first time in Bangkok as I found the perfect Moo Ping right in front of my hotel – The Key Bangkok Hotel.

Compared to the many Moo Ping stalls I have tasted in Bangkok or even Hatyai in Thailand, this stall managed to suit my taste bud real well as each skew had just the right balance of texture and bites (85% meat & 15% fat). Moreover, the sweetness was just right for me without the overpowering of the overall flavors. The amazing thing is that it was only priced cheaply at THB10/skew. The Thais love to have their Moo Ping with warm sticky rice (Khao Niao/ข้าวเหนียว) and each small pack would cost only THB5. Two skews of Moo Ping and a pack of Khao Niao would be the perfect breakfast or supper for anyone. For those whom had tried out the delicious and succulent Moo Ping as well as the sticky rice, that’s why I can be so crazy to freeze packed them and flew them home to share with you. That’s 6kg extra baggage~ LOL~ 😛

Anyway, I had tried to recreate that flavor but could not get it to be 100% exact to the taste of the ones I had tried in Bangkok. There must be a secret ingredient in it. Perhaps, they might be using some sort of MSG which is the common practice in most street stalls. I’m not a fan of MSG so here’s the 95% result of my Moo Ping. Do try out my recipe~ 🙂

RECIPE: MOO PING (BBQ PORK ON SKEWERS

Makes: 20-25 skews (7” bamboo skewers – soak overnight before using)

Ingredients A:
4 cilantro roots (about 2 Tbsp) or chopped cilantro stems (if roots are not available)
6 cloves garlic
1 tsp white pepper corns
1 tsp black pepper corns

Ingredients B:
2 Tbsp palm sugar (pound until powdery) or brown sugar or honey
2 Tbsp mushroom/oyster sauce
2 Tbsp soy sauce
2 Tbsp black soy sauce
1 Tbsp cooking oil
1 Tbsp corn starch
100ml coconut milk (mix in a tiny pinch of salt – keep 1/4 for brushing)

Ingredients C:
700gm pork shoulder (about 1.5lbs – wash clean, drain well, semi freeze and slice about 3mm thickness. Lightly hammer each piece to break the veins)
200gm pork fat (optional – slice 3-5mm, to be skewed in between 2 pieces of meat. Lightly hammer each piece.)

PREPARATIONS:

1. Use a mortar, pound everything in Ingredient A. You may add a bit of water if it’s too dry to scoop out.
2. In a big stainless steel basin, mix the pounded Ingredient A with Ingredient B. Mix thoroughly.
3. Add in the sliced pork from Ingredient C and mix well.
4. Slowly skew the marinated meat onto the bamboo skewers. Maximum until half the length of the skewer. Make sure the meat pieces are pressed compactly without showing the bamboo skewers. You can opt to skew a piece of fat in between the meat for that sinful flavor.
5. Place all the skewers into a Ziploc bag or a big plastic container. Pour the remaining marinates into it. Make sure you lay the skewers flat.
6. Leave them in the chiller for a minimum of 6-8 hours. The best result is to leave them overnight for maximum flavors.
7. Prior to barbeque, pour out the remaining marinate and mix with the remaining coconut milk. It’s for brushing purposes.
8. Barbeque over medium charcoal heat. Make sure the exposed bamboo skewers won’t get direct heat or they may be charred. Turn the skewers every 2 minutes until cook. Do brush some of the remaining marinate on the meat (as stated in #7) prior to turning them.
9. The Thais may love their Moo Ping with sticky rice. For me, I would love them with some lightly dressed salads.

Note: You can opt not to add fat to your Moo Ping but that’s where the natural flavor comes in.

Use the Skywalk towards Exit 1 and walk downstairs towards Terminal 21. Walk straight towards “The Westin Grande Sukhumvit Hotel”. At the road before the hotel, turn right into Sukhumvit Soi 19 and walk about 70m and you will see the “The Key” after a row of shop houses on your left. The stall is located just at entrance of The Key Bangkok Hotel at the junction of Sukhumvit Soi 19 and Sukhumvit Soi 17 next to the Family Mart convenient shop.

CHICO INTERIOR PRODUCTS & CAFE IN BANGKOK THAILAND

By staying at The Key Bangkok Hotel where travelling via the two major mass transit systems has been real fun and convenient, I managed to explore quite a few interesting cafes within the Watthana district. Located nearby the BTS Thong Lo Station is a charming little hideaway establishment named Chico Interior Products & Café. If you are a cat lover, you would surely go goo-goo gaga over some of the free roaming cats within the premises. The bungalow-style shop may be hidden away from the main road but it was never short of visitors, especially those Japanese staying within the vicinity. Even their main website is all written in Japanese other than Thai or English. Isn’t that obvious? LOL~ 😛 If you love the serenity away from the hustle and bustle of the city life, this will be quite a nice place to spend some time sipping some beverages and gobbling down some of their nice homemade snacks and light meals.

On top of some tranquil moments with the furry felines, you can also spend some time mingling through some of their interior home products as well as personal gifts, not forgetting cat related items too. Some of their products may include Thai handicrafts, unique kitchen utensils, pillows, pillowcases similar to that silk pillow case online, cushions, aromatherapy lamps, bamboo by-products, natural soaps, beewax candles, trinkets, wind chimes, stuffed toys, printed clothes and more.

Since it was already almost tea time, we had some light food and dessert over some hot beverages. I started off with a hot pot of Lavender Tea (THB100nett). With so much of eating spree for the last few days, it indeed relieved my eating tension and stress~ LOL~ 😛 Luckily they did not burn any lavender oil or I would be fast asleep under such a relaxing environment.

I also did try out their Hot Chocolate (THB80nett). It was filled with chocolate richness and the milk they used was also awesomely creamy. Wait! Why is there a fat cat having its sauna in my cup? Haha~ The latte art may look simple but based on the comment by an established 3D latte art master, it required lots of patience and steady hand to come out with this design. The hot beverage came with a cute cat shaped cookie as well.

As for a light meal, I ordered the Japanese Style Spaghetti (THB160nett). Wow~ I was impressed. The color may not look pleasant to the eyes but the taste was heavenly. It was just a simple spaghetti dish, stir fried with some pork slices, shitake and enoki mushrooms, zucchini and garnished with some bonito flakes but the gravy itself was pepped with rich earthly flavors. I could not stop myself from pussy licking the whole plate dry~ Meow~ 😛 For those who would want to get the best of the meal deal, I would advise you to drop by between 11.30am and 2.00pm as they have daily set lunch available, which would include a salad, a main dish (4 options such as Japanese Omu Rice, Japanese Style Spaghetti, Spaghetti with Meat Sauce and Japanese Beef Curry with Rice) and a cup of hot beverage (+THB10 for iced beverages) at only THB185nett.

We were lucky on that day as they have Dessert of The Day which was the Hot Banana Pie served with Vanilla Ice Cream (THB55nett). The hot oozing banana combined with the fresh vanilla pod ice cream was so seductive. The sensation was beyond any earthly word.

Overall, I quite like this place due to the peaceful settings within a hidden greenery filled premises. I also like the fore-sight of the shop owner by allowing patrons to have a place to relax before continuing with their hectic lifestyle. Time will stand still here while you are immensely occupied with the many interesting and unique items you can bring home as souvenirs. At least you do not have to suffer the scorching heat from the scattered markets to have your shopping done. Everything will be inclusive of the necessary taxes.

Just a note to those shutterbugs: You may take some general shots of the shop but not on individual product as they would want their products to be exclusive to their patrons.

Take the BTS Sukhumvit Line and stop at BTS Thong Lo Station. Use the Skywalk towards Exit 1 and walk downstairs all the way until you reach a junction. Turn right into Sukhumvit Soi 53. Walk on for about 15 minutes, pass the newly opened Nippon Kai Market, until the second junction with a “Soi Renoo” road sign. Turn right into the small alley and you can see the Chico signboard right at the end. If you are tired of walking, you can always get a tuk-tuk or a motorbike taxi by telling them that you are going to Soi Renoo or Chico.
